During the Holy Week season in the Philippines, the tradition of refraining from eating meat is observed. And that is why fish and other seafood dishes are quite popular during Holy Week. Sharing my easy-to-prepare Mackerel recipe.
Uni-Pak Mackerel, 425g can
1 clove garlic, peeled
10 pcs Black Olives, sliced
6-8 slice of Orange Peels ** you can just use calamansi or lemon juice instead of orange peel
Chili flakes (I used Habanero salt)
salt to taste
Heat pan (preferably non-stick) and add oil. Add orange peels and garlic, remove from pan until it is almost brown and fragrant. Sear all side of the Mackerel, add the black olives and sprinkle with the habanero salt (chili flakes + salt). Add the garlic and orange peels before serving. Good for 2 pax.
