RECIPE: TKG's Pajeon

Watching tons of kdramas can really make you crave and enjoy Korean dishes and my home is not an exemption. And I love replicating dishes so here's my version of pajeon. By the way, pajeon is akin to Japanese okonomiyaki. Checking online, "pa" refers to spring onions, while "jeon" is pancake (source: http://en.wikipedia.org/wiki/Pajeon). This is so very easy to make and great as snack.


Ingredients:

4 medium size eggs
2 stalks leeks, sliced into inches
4 tbsp kimchi (or as desired), cut into small pieces
3 tbsp Maya all-purpose flour
1 tsp black sesame
1 tbsp Dona Elena olive oil
6 pcs large shrimps, cut into small pieces
a pinch of salt

In a bowl, beat egg and gradually add the flour. Add about 1/3 of the leeks, and everything except for the oil. Make sure to mix well. Coat non-stick pan with oil until it heats up then add the pajeon batter. Cover the pan and wait for it to cook. Add the remaining leeks if the pajeon is almost done. Serving is good for 2-3.
